Level 2 Food Preparation and Cooking

  • Duration: One year
  • Requirements: Level 1 Diploma in Introduction to Professional Cookery or experience working in the catering industry. Students will need good literacy and numeracy skills.
  • Details: This NVQ programme is aimed at people already working in the industry and gives you the opportunity to gain a professional qualification in order to further your career in the catering industry. Working in our new state-of-the-art training kitchens as well as our professional Avenue 141 production kitchen, this course will give you the skills and techniques to work in a range of establishments within the hospitality and catering industry.
  • Content: This course is portfolio based and you will have to complete mandatory units that will include:
    ■ Health and safety
    ■ Working as part of a team
    ■ Food safety
    ■ Maintaining and handling knives
    You will also learn professional cookery skills that will equip you for industry. Your portfolio will consist of an element of written knowledge and practical assessments at college.
  • Assessment: There is no formal exam for this qualification – a portfolio has to be completed in order to obtain this City and Guilds qualification. Every unit is tested with either short answer or multiple choice question papers. Practical units are observed and assessed in the kitchen.
  • Progression: Once you have completed the Level 2 qualification you will have the choice of progressing once interviewed on to a Level 3 qualification, apprenticeship or full-time employment.
  • Considerations: You will need to purchase a uniform to comply with health and safety in the kitchen. A list of the professional clothing and equipment you need
    will be supplied at your interview.

Level 2 Award in Food Safety

  • Duration: One day
  • Requirements: There are no entry requirements for this course.
  • Details: A full day’s course covering all aspects of food safety.
  • Content: The course content will include all key information – laws that apply to food businesses and food handlers, the requirements of the current regulations, concepts of food hazards and how the risk of food poisoning can be contained plus, how food handlers can pose a risk to food safety, the importance of appropriate storage conditions for different types of food, the importance of cleaning in food premises, and high standards for structure and equipment to promote good hygiene in food premises.
  • Assessment: You will be given a course handbook and a varied delivery including presentations, case studies and professional discussions. You will be assessed by a short exam at the end of the day’s course.
  • Progression: This is a recognised qualification in the catering industry that is required for anyone working with food.

Applying for a course that has a concession?

Then the course could be free! Some courses are eligible for funding if you are an unemployed individual, on a state benefit* and you want to enter employment and need the skills from one of our funded courses to achieve this.

* (Income Support (universal credit), Job Seekers, Housing Benefit, Council tax Benefit, Pension Credit, ESA contribution Based, ESA work related activity group. Includes SFA funded courses only. You must be aged 19-23 on 31 August 2014. You must produce evidence of the benefit in your name when you enrol. Concessions do not apply to higher education courses.

The fee for your chosen course is listed in the individual course sections accessed on this page. It includes the cost of tuition plus the cost of any exam and registration fee charged by the exam board (if applicable).

Are there any other costs I may have to pay?

I’m an international student – are my course fees different?

If you have not been resident in the UK, EU or EEA for more than three years before the start of your course (excluding any time spent in full-time education), different course fees may apply to you – please call 01329 815 200 to find out more. Fareham College cannot sponsor Tier 4 student visas.

My employer is funding my course – what do I need to do?

You will need to complete an Employer Authorisation form, and return to the Enrolments team, and your employer will be invoiced accordingly.

How do I pay for my course?

You can pay by cash, cheque, credit or debit card. And for courses over £500 we offer a payment by instalment service to help spread the cost of your course. A £250 minimum deposit is required if you choose to pay by instalments. Please contact the College for more information.
