Diploma Professional Cookery
Two years – Full time
Five GCSEs at grade 9-3 including English and Maths, or a full Level 1 qualification with a ‘stepping stone’ English and Maths qualification.
The first year of this course is aimed at students with an interest in the hospitality industry. You will be taught by a team of professional lecturers who are highly qualified to teach you skills related to preparing, cooking and serving food.
As part of the course you will develop your skills and theoretical knowledge through observations, demonstrations and visits to hotels and restaurants. You will also have the opportunity to compete in national competitions.
You will gain hands-on experience in our state-of-the-art kitchens and AA College Rosette Accredited Restaurant, Avenue 141.
There is a strong emphasis on professionalism, team work, and the demands of working in a commercial environment.
Course topics include:
- Investigating the hospitality and catering industry
- Food safety in catering
- Applying workplace skills
On successful completion of year one, you will achieve:
- City and Guilds Level 1 Diploma in Introduction to Professional Cookery
- City and Guilds Level 1 Certificate in Introduction to Professional Food and Beverage Service
- RSPH Level 2 Award in Food Safety and Catering
After your first year, you will further develop your skills by working in professional kitchens and restaurants. You will progress your practical skills and theoretical knowledge through observations, demonstrations and visits to hotels and restaurants.
There is an expectation that you will have gained prior knowledge and skills to work as an independent learner and take responsibility for working professionally on your designated stations in the production kitchen under the scrutiny and guidance of your chef lecturer.
You will continue to develop employability skills in our state-of-the-art kitchens and commercial restaurant Avenue 141. Your programme will also provide work experience opportunities in some of the most prestigious establishments that could include the 5* hotels Pennyhill Park & Spa and Lainston House, Michelin star restaurant Galvin at the Windows, and the award-winning restaurant at Chewton Glen.
You will be required to meet the demands of working in a real catering environment serving paying customers.
On successful completion of year two you will achieve:
- City and Guilds Level 2 Diploma in Professional Cookery
- City and Guilds Level 2 Diploma in Professional Food and Beverage Service.
After completion of this two year programme you could progress on to Level 3 Professional Cookery or Level 3 Food and Beverage Service Supervision. Alternatively, you could find employment as a chef de partie in charge of a particular area of production, or join a food and beverage establishment as a section team leader.
